chocolate fudge muffins

You can adjust this recipe by subsitutilng the maple syrup for golden syrup or good quality honey-the flavours of course will be different.

 
The custard powder give a strong vanilla flavour to the muffins, if you don't have custard powder, just add an extra tablespoon of flour.

 
  • 170g flour
  • 1 tbsp custard powder (see above)
  • 1 tsp bicardbonate of soda
  • 1tsp baking powder
  • 2 tbsp cocoa
  • 150g caster sugar or light brown sugar
  • 150ml sunflower oil
  • 150ml Buttermilk
  • 2eggs
  • 2tbsp maple syrup or honey or golden syrup
 
Preheat oven to 180C

Mix the flour, custard powder, soda and cocoa.

Make a well in the centre and add the  eggs and liquid, whisk till all ingredients are incorporated,

Cook 25 mins at 180C

Allow to cool
